Born in France I am living on Crete since 2001.
My greek wife’s family owns an olive tree farm in the small village of Elia (near Heraklion) on the island of Crete (Greece).
Since I came here, I started improving our family business. 2008, I started a website and the selling of our excellent Cretan olive oil.

Crop last December

Spring treatment. Pulverization of powder
of copper, nitrogen and oligoelements for a better fruit formation. .

All our crop comes from one village.
In the center of the village : the olive oil mill.

We bring the olives every evening and within few days the olives get crushed and the olive oil extracted. That way we can guarantee the high quality of our product.
Our fields, located some kilometers away from the sea, are devoted to the production of olive oil since several hundred of years.
The origin of our olive trees goes back up to several generations.
Their variety is of Cretan origin (koroneiki). The climate of the region, the nature of the soil as well as our know-how gives its unique identity to our oil.
The crop is made by hand on December and January.

Olives are emptied in a tunnel, cleared out from leaves and washed in water.



After this washing, olives are ready. A crusher transforms olives into paste.

This paste is blended during 20 minutes
and then sent towards the press.

The press separates this paste in three products: olive oil,
water and pulp.

For a better conservation, a last operation withdraws the
traces of water in oil.

OUR OLIVE OIL IS EXTRA VIRGIN year after year.
It is then stocked in a vat in stainless steel.

After a rest of some weeks, the oil is clear and ready for bottling.
We bottled our production of olive oil September, 2009.
The oil is injected into the bottle, then the bottle is hermetically sealed, labeled and wrapped into cardboards.
The trip towards Europe can begin!
